I posted this up on my Instagram and I thought I’d share this amazing recipe with you.
It is so easy to make and absolutely delicious!
- Chickpeas (or chicken)
- 1/2 tsp turmeric
- 1/2 tsp dried coriander
- 1/2 tsp chilli flakes
- 1/2 tsp ginger
- 1 clove of garlic
- 20ml water
- 150g chopped tomatoes
- 1 tbsp mango chutney
- 1 tbsp tomato ketchup
- 1 tsp mint sauce
- Fry Light
- Pulse the onion, chilli and ginger in a blender to make a paste.
- Spray a pan with Fry Light and add the paste and cook for 4-5 minutes.
- Add the chopped tomatoes, mango chutney, ketchup, mint sauce and remainder of the spices and cook for a further 5 minutes.
- Add the tinned chickpeas and cook for a further 3-4 minutes frequently stirring.
Enjoy hot with a poppadom or two and voila!
NB: Amend measurements dependent on portion size.
If cooking chicken or another meat, cook the meat first and add the sauce to the pan.
